• When kept refrigerated below 38 °F (3.3 °C), unopened black caviar has up to a 6 week shelf life, while unopened red caviar has up to a 12 month shelf life when kept frozen below 0 °F (-17.8 °C). Once opened, it's best to consume caviar within 3 days.
